It’s strawberry season and I couldn’t resist the beautiful strawberries I saw this weekend. One they were on sale (win) and two they had such a beautiful red color. As I stood in the store salivating, I decided to make some strawberry jam to jazz up my Italian Meringue Buttercream. It was super easy to make and is my go-to recipe for cake fillings.
After making homemade Strawberry Jam I could not go back to store-bought Jam. Not only is it is delicious, but it is also one hundred percent natural. It contains no high fructose corn syrup or commercial fruit pectin. I used lemon juice to replace the commercial pectin. Lemon juice is loaded with a natural pectin which is used to thicken up the jam. You can never go wrong with homemade.

To make strawberry Jam you only need three ingredients strawberries, sugar, and lemon juice. These three ingredients when cooked for a few minutes become delicious jam that you can eat all day. Are you ready to make strawberry jam? Ok, let’s go…
Ingredients:
The hull of the strawberry is the green leafy top of the strawberry. Using a knife remove the hull from the top of the strawberry. No need to cut the strawberries.
Add the strawberries to the food processor and pulse.
After a few pulses, the strawberries should look like this.
Add the strawberries to a saucepan, then add the lemon juice and sugar.
Mix the sugar with the strawberries and turn on the stove to medium-high. Stir constantly to avoid the jam from sticking to the pot.
Cook for about 8 to 9 minutes or until you can see the froth on top.
To thicken add some cornstarch. This is optional. Place into a mason jar to cool. Wait until the strawberry jam is completely cooled before closing the jar and placing it into the refrigerator.
For regular Strawberry Jam, you can stop here. However, since I am making this for my upcoming post-Strawberry Italian Meringue Buttercream, I like to remove the seeds. So, I pureed it in the Nutribullet. Then, using a small strainer, strained the Strawberry Jam to remove the seeds.
When it was cooled, I sealed the mason jar and placed it into the refrigerator. Strawberry jam is perfect for a nice toast. It adds a lot of flavor to Ezekiel Bread. Enjoy…

Can this be frozen for use year-round? If not, do out-of-season store bought strawberries work well?

Hi,
Yes, jam can be frozen for up to a year. I have used strawberries out of season and they work very well. Frozen strawberries are another great alternative. Let me know how it turned out.
