A Strawberry Cake made completely from scratch with no gelatin, boxed mix or jello added. The secret to this delicious Strawberry Cake is the homemade Strawberry Jam.
This strawberry cake has been a year in the making. I have attempted a few from scratch strawberry recipes and can I say DISASTER. I hated how cakes came out. Not one to give up, I stepped away from it. But this time around I was determined to get a strawberry cake that was moist, delicious and well balanced in flavored. After a lot of attempts, I finally have a recipe to be proud of that you too can be happy to share with family and friends. When paired with my delicious strawberry Italian Meringue Buttercream it is a dream made in heaven. It has just the right amount of strawberry flavor.
Not one to brag, it is so good even my friends had some great things to say about it. What my friends are saying about this dream cake: “Wow!!!” “Delicious”. One of my friends even asked if I would make this cake her wedding to which I said absolutely (by the way she is not engaged yet, but I will pencil her in).

To make this cake I substituted some of the butter for oil. The two combined gives the cake such a great flavor. I was concerned that if I all butter the cake would be dry. Not the case at all. The cake is moist and delicious. In addition, I used self-rising flour which gives the cake nice crumb. If you do not have self-rising flour add a ½ tsp. of baking powder and ¼ tsp. salt to 1 cup of sifted cake flour.
Materials:
Preheat the oven to 350°F. Spray two cake pans with non-stick spray and line the bottom of the pans with parchment paper.
Measure the buttermilk and add the strawberry jam. Mix until combined. Leave on the side.
In a large mixing bowl, using a handheld mixer or a stand mixer, beat the butter until light in color.
Then add the sugar and the oil. Mix until light and fluffy. Scraping down the sides of the bowl.
Add eggs one at a time, beating well after each egg. Scrape down the sides of the bowl. Then add the strawberry and vanilla extract.
Mix until combined, then add the flour.
Alternate with the buttermilk mixture. Scrape down the sides and the bottom of the bowl. Do not over mix. Then add the gel coloring (pink or red).
I used Wilton pink gel color.
Divide the batter equally by either weighing the batter or by eye and spread evenly with a small spatula. Drop the cake pans on the counter a few times to remove any air bubbles. Bake for 20 to 25 minutes or until a toothpick comes out clean.
Cool the cakes completely before decorating. To decorate pair with the Best Strawberry Italian Meringue Buttercream use a Wilton 1M tip to make buttercream roses.
