I am a chocolate and carrot cake fan all the way, but this vanilla cupcake has won me over it is light, airy and delicious. Finding a good vanilla cupcake recipe is hard. They are either heavy or dense or dry. The great thing about this vanilla is that you can add flavors to make it more interesting.
A few weeks ago I mentioned that my niece wanted to bake along with me. She requested I add more cupcake recipes on the blog. We are essentially starting a cupcake baking/decorating club our first recipe was the Chocolate Nutella cupcakes (my fav). So…I promised I would add more cupcake recipes on the blog so she can follow along and I get to be a super auntie (picture Wonder Woman but with an apron). Which is way cooler than being covered in flour from head to toe. In the upcoming weeks, I will begin posting how to decorate cupcakes (not just the traditional way but with fondant etc). These vanilla cupcakes are easy to make. I made the batter and baked the cupcakes in about 25 minutes. I love using cake flour it makes it light. You can use milk, but I prefer buttermilk because of the tanginess and it makes cakes moist and tender. If you don’t have buttermilk, add a tablespoon of lemon juice to a cup of regular milk (for more baking tips see my 20 tips and tricks for baking cakes). Also, don’t be afraid to add more vanilla or better yet add some vanilla bean.
Once you have gathered all your ingredients make sure the eggs, butter, and buttermilk are all at room temperature. Do not overfill the cupcake liner or you will have muffins instead. Check the cupcakes before the time because overbaking will cause them to be dry.
